Hell Yeah !!! ......


I'll eat KALE this way any day. 

 it's easy, cheap,it's filling, and best of all a healthy very tasty way to eat kale.
*vegetarians just leave the chicken out and your still getting a good dose of protein. 




For the salad and dressing you'll need:
  • 2 cups of boneless cooked diced chicken breast [ i usually make a rotissery chicken and use it for two different dishes]
  • 8 oz. of kale leafs [rinsed dried and cut into small bite size pieces]
  • 2 stalks chopped into small pieces celery 
  • 1/3 cup chopped raisins
  • 1/3 cup chopped unsalted almonds 
  • 1/3 cup chooped dries cranberries 
  • 1/3 cup mayo 
  • 3 Tbsp apple cider vinegar
  • 1 1/2 Tbsp. Honey 
  • 1/2 Tbsp Dijon Mustard 
  • pinch of salt 
  • freshly groundpepper        


  • Instructions: 
  • place first 6 ingredients in bowl mix well and set aside. 
  • In a seperate small bowl mix all ingredients for the dressing until well combined. Pour dressing over salad once ready to eat mix well. Enjoy !
