update & recipe for glaze ...

ok, so here it is ... the eggless orange/lemon glaze chocolate drizzle [weekend] cake.
i think it turned out pretty well it is a bit on the denser side. personally i like light cakes but it is very yummy and super easy to make.
also i added 2 teaspoons of vanilla and 2 tablespoons of  white vinegar as someone had mentioned in the reviews. the cake held up nicely and nobody was able to tell that it is eggless.


as mentioned, i glazed the cake with a simple orange /lemon glaze and topped it off with a drizzle of chocolate.

what you need:

1/2 -1 orange, juiced
1 teaspoon of fine orangec zest  [optional]
1 teaspoon grand marnier to spike it up [optional] * i left it out this time
1/2  lemon, juiced
two cups powdered sugar
1/4 cup semi sweet or dark chocolate morsels

what you do:
pour chocolate chips into a bowl.
place a sauce pan filled 1/4 with water on low - medium heat
place the bowl with chocolate chips into your saucepan [making sure not to boil the water ] and stir contents until evenly melted

in the meantime stir 1 tablespoon lemon juice and 2 tablespoon orange juice, some grated orange zest  and the *grand marnier into the powdered sugar.
stir well until you have a smooth, thick mixture that runs very slowly off the spoon.
if glaze is too thin add more powdered sugar or more lemon and orange juice if too thick...[remember once the cake has slightly cooled off and you add he glaze it starts to "melt" do to heat of the cake and spreads easier!!]

now cover the cake with the glaze using a spatula to evenly distribute it on the cakes surface and wait just a few minutes to drizzle the chocolate on top...

yumm, yumm plain eggless cake turned fancy ;) !
