easy fun sized ...

homemade apple strudel.
when we're in the mood for a bit of  home. a slice of warm apple strudel can be so comforting and a great snack. but when i don't have the time to make the real deal i make these little fun sized or snack sized mini strudels to hit the spot.
of course you can always kick it up a notch with a scoop of vanilla ice cream or some whipped cream and you'll  have a full on yummy dessert. great when you're having some guests...

you need :


  •  puff pastry not filo dough [takes a few minutes to thaw out pastry sheets/take sheets apart and lay on a   flat surface]  
  •  1 tablespoon sugar [ plus some extra to sprinkle on top] 
  •  1/2 teaspoon cinnamon 
  •  1 big green apple [ tart; granny smith or boscop ] 
  •  cookie sheet lined with parchment paper 
  •  rolling pin
  •  apricot jam mixed with a bit of water [to brush on top] optional

* you can find puff pastry in the freezer section



  what you do:

  • preheat oven to 400 F / 200 C  
  • mix sugar and cinnamon in a small bowl 
  • peel, core and slice the apple 
  • in the meantime the puff pastry should be semi defrosted, 
  • flatten the dough just a little bit with your rolling pin 
  • cut dough into four equal squares 
  • sprinkle each square with 1/2 a teaspoon of the sugar/cinnamon mix 
  • place apple slice on each puff pastry square sprinkle some more sugar cinnamon mix on top
  • now take opposite corners of the square and fold them like a blanket over the apple slice and press corners firmly together 
  • * optional you can brush the top with the apricot glaze or some milk and sprinkle a tiny bit of sugar on top 
  • place on prepped baking sheet and bake in preheated oven until puff pastry has puffed and looks golden brown about 10 min.
