Dinner with Tom ...

"Tom Kha" 

Post - Master Cleanse Soup
 Breaking the fast of the 10 day master cleanse i knew i had to take it easy and have something light. Not to upset my stomach. 
i was craving " Tom Kha" a vegetable broth [ i dicovered at a Thai place ] with a hint of coconut, ginger and lime and filled with loads of vegetables. 
So i tried to replicate the taste and I have to say it came out pretty darn close. 


Here is what i came up with  
 [ i doubled mine up ] 

2 -3 cups water 
4 cups unsweetened coconut milk
2 inches of ginger root cut into strips or little pieces 
Juice of 1 lime 
1 stick lemon grass
[4-6 lime leaves] optional if you dont have use a bit more lime juice to taste
1 tsp. organic cayenne pepper
Hand full  Fresh sliced button mushrooms 
2 big thinly sliced carrots
2 scallions cut in 1 inch pieces
3-4 mini bok choy 
1-2 tsp salt to taste

1. Smash the lemon grass with the flat side of a chef's knife and then cut into 1inch/ 2.5 cm strips. 
Peel and slice the ginger root either into long strips or little pieces.
Tear up lime leaves into thirds. Set aside. 

2. Wash scallions and cut into 1inch strips. Peel carrots and cut into thin slices. 
Clean mushrooms and slice as well. Set aside. 

3. In a sucepan heat coconut milk and water for about 2-3 min. Don't let it come to a boil. Reduce and add the reserved lemon grass / ginger/ lime leaves/ carrots / cayenne pepper and salt. Stir and cook for 1min.
4. Now add the bok choy / scallions/ mushrooms and lime juice. Cook for 2-3 minutes until tender.
