retrospect: quicker then quick humpday dinner

ever have one of those days were the dog has not been walked and dinner should be ready on the table for the famished "gang "?  in addition you have no idea what to make and just rummage through the fridge frantically trying to come up with just anything?!
well, today was one of those days for me. however with a little help from Z walking the dog with me and putting her chopping and stirring skills to work we were sitting and enjoying dinner [me with a glass of wine] 10 - 15 minutes later enjoying a really yummy meal.

here is what we collected from the pantry and fridge

  • 1 lb [454 g] penne pasta 
  • 3-4 tablespoons olive oil
  • 2 handfuls of baby bell peppers, dice small 
  • 3 scallions, cut small using white and green
  • 2 celery stalks, diced
  • 1 cup cherry tomatoes 
  • salt and pepper to taste
  • feta cheese [optional] 


  1. bring a large pot of water to a boil and cook your pasta according to package instructions. 
  2. meanwhile in a large skillet heat some olive oil and sautee the scallions ( about 3 min ) 
  3. add the peppers sautee and add about 1/4 cup of the pasta water, season with salt and pepper and cook for 5 more minutes. add the cherry tomatoes
  4. drain pasta and toss with sauce 
  5. top with feta [optional but we found it gives a great tangy twist]
