1,2,3 ....

dinner done

 need a quick as 1,2,3 & healthy but simple [optional vegetarian dinner] mid - week dinner?! 



this has been an old all time favorite since the kids were toddlers. Accompanied with a big salad or a big platter of veggies such as cucumbers, peppers, jicama, red beets, carrots, celery stalks, cut into finger food slices. 
Kids love to eat with their hands & it made them love veggies early on.  It's a great meal by itself  but also compliments many proteins as well. Look at bottom for other suggestions. 

 You need :   4 - 6 people 

1 bag of fresh young potatoes [ i used yukon] 
Olive oil 
1-3 cloves of garlic minced 

* Optional sprig of fresh rosemary or a bit of lemon juice, sometimes i use steak seasoning i kind of play it by ear ] 
Salt & pepper to taste 

For the Tzaziki or Joghurt sauce 
  1-4 cups of plain yoghurt [ regular, lowfat doesn't matter ! whatever makes you happy] 
 1 persian cucumber [ or a 1/4 -1/2 of a hot house cucumber] washed and roughly peeled then shredded into fine pieces 
* don't like cucumbers ?! Omit them and just add a bunch of fresh herbs [ such as parsley, and dill to the joghurt ] 
 1 clove of garlic minced 
  Olive oil 
  Salt 

Preheat Oven to 450 F 

•Wash then half and quarter the potatoes 
• sprinkle the bottom of a casserole dish with olive oil 
• add potatoes in a single layer into the dish sprinkle some more with the olive oil [ i use my washed hands ] to get it all covered 
season well with the minced garlic, salt and pepper, a bit of lemon juice and or other seasonings you like
• put into the preheated oven and bake until golden brown for about 45 minutes. 

In the meantime prep the Tzaziki

• take shredded cucumber and sprinkle with a bit of salt set aside let them "sweat" * this step is completely optional not a must [ the salt will drain the access water in the cucumber and prevent the tzaziki from turning too liquidy ] 
• in the meantime wash & prep your veggies or a salad ?! 
•Drain cucumbers from the access water.
• add Yoghurt, minced garlic & 1 tbsp  olive oil stir until blended well. add salt and pepper to taste - You're done !! 

Serve the potatoes while hot with a generous scoop of tzaziki / joghurt herb sauce and salad or veggies. 
Enjoy! 

A great variation is also to roast some veggies: 
* this week i added some fennel and red beet tossed in olive oil and garlic to oven in seperat dish. 
* baked feta is also a great option 
* too much veggies ?! Have a steak with it 
* or a piece of salmon
